- Step 2: In a medium saucepan, combine the chopped cherry peppers, diced onion, white vinegar, red wine vinegar, and sugar. Stir well to dissolve the sugar completely.
- Step 3: Add the red pepper flakes, salt, and black pepper to the mixture. Bring the entire mixture to a gentle boil over medium-high heat, stirring occasionally.
- Step 4: Reduce heat to medium-low and simmer the relish, stirring frequently, until the liquid has almost completely evaporated and the mixture has thickened, approximately 15-20 minutes.
- Step 5: Remove from heat and let the Jersey Mike’s pepper relish recipe cool completely for at least one hour before serving. The relish will continue to thicken as it cools.
- Step 6: Transfer the cooled relish to a clean glass jar or airtight container. The flavors will develop and improve after resting for a few hours.
